It has been a landmark year for the Compass Group and its Caffe Dallucci brand.
The concept was originally imported from its German operations but has been honed for the UK market, with the company implementing it at a number of client sites as well as launching the first public-facing site in Hampshire.
Head of business excellence, Steve Lovegrove, is one of the key figures behind the brand’s ascent and he has carried out extensive work on layout and flow to ensure a smooth service journey.
“The design of Caffè Dallucci needs to be intuitive and it is important that we keep the flow moving,” he explains. “The location of equipment and counter flow is important to ensure all items of equipment are appropriately placed. We build up the back-bar in modules that incorporate the right equipment and tools to ensure efficient service. My general rule of thumb is that when a team member is at a work station, everything should be within arm’s reach to improve efficiency and service speed for the customer. If they have to walk away from that work station then it’s in the wrong place.”
The next step will be to open additional units in 2018. “We already have a strong pipeline and outlook is looking extremely positive,” says Steve.
