David Page is very much British restaurant royalty having enjoyed a glittering 40-year career in the industry that has seen him lead PizzaExpress as it floated on the stock exchange and establish The Clapham House Group.
David has made no secret of his desire to take advantage of softening leasehold conditions that make new launches more viable, making it certain that the business will add to the 60 stores that helped it achieve EBITDA of £5.5m on sales of £55m during its latest financial year.
Two-thirds of its estate are comprised of the ever-popular Franco Manco pizza concept, which prides itself on cooking everything from scratch using highly-skilled chefs.
“We have always served freshly made pizza, which is as it should be,” explains David. “Some other pizza businesses in the UK use frozen food products and frozen dough. We continue to make our dough every day in each of our pizzeria. Our aim is to keep the price of our margherita pizza (the number two on the menu) well below the price of the frozen product at many high street pizza chains. The only thing we freeze at Franco Manca is our ice cream.”
