Overseeing the food development of some 65 restaurants, including sister brands La Tasca and La Vino, you’ll do well to find anyone in the casual dining field that knows more about South American food trends than Las Iguanas’ Glenn Evans.
The company’s vertical focus has given it a point of differentiation in what has become a fiercely-contested market sphere, but it wouldn’t be anywhere without the finely-tuned kitchen operations that back up its estate.
Las Iguanas boasts one of the largest teams of skilled chefs in the sector, which allows it to produce everything in-house and ensures that the percentage of fresh food in its dishes is as high as 80%.
Glenn admits it is fantastic to have such a large pool of ingredients to choose from.
“It is so diverse in terms of what we can go and do. You don’t have to allude to trends in the industry, we can just keep coming up with brand new ideas from different countries,” he says.
The company is also seeking out new niches in a bid to develop its brand, including partnering with Airbnb to run a monthly ‘chef’s table’ at its flagship restaurant at the Southbank Centre.
Hosted by Glenn himself, the sessions allow participants to sample dishes from Latin America and learn about the cuisine in detail.
