Henry Unwin has one of those job titles that make people look twice at his business card.
With more than 400 restaurants in the UK and a business worth almost £850m in annual sales, the sheer scale of Nando’s business means that even the smallest actions around sustainability can have a seismic impact when applied to an entire estate.
His remit as far as sustainability goes encompasses every aspect of the operation, from initial property selection to critical design features of the kitchen and even the conduits through which surplus food product is distributed.
Henry and his team have compiled a ‘Green Fit-Out Guide’ that gives new and refurbished restaurants a blueprint from which to operate sustainably.
Many of the initiatives, including material specification and the use of energy-saving equipment, have been trialled extensively at its test site in Cambridge.
By the end of this year all Nando’s restaurants will be run by 100% renewable electricity. “That will be a huge step for us because it represents 19% of our carbon footprint,” reveals Henry.
