Jane acknowledges that kitchens are the engine rooms of restaurants and if a site is too small to accommodate menu changes and innovation then it’s best left alone.

“We’re not going to compromise the kitchen because that’s just going to result in disappointed customers. If a site is not appropriate for a restaurant then it’s not appropriate for a restaurant. I wouldn’t compromise the kitchen,” she declares.
