There is quite literally the sweet smell of success in the air as far as Frankie & Benny’s is concerned following the successful launch of its new dessert menu.
“It has given us the ability to not only put a great product on our core menu but also our breakfast and kids’ menus, giving our guests a great product and versatility on the menu,” explains executive chef Ben Keggans.
As the man who is responsible for the popular leisure chain’s food development roadmap, he admits the most rewarding aspect of his role is being involved in the evolution of recipes and then seeing the feedback from kitchen teams and guests.
Keeping an eye on new equipment innovation is also important to him in today’s climate, especially when you have to weigh up the labour challenges, skill-sets, running costs and food costs associated with 260 sites.
“We need to be getting the maximum out of every piece of kitchen equipment, whether that’s through energy savings, ease of cleaning or consistency of the cooked product. We do need to be asking our kitchen equipment to be doing more and more for our kitchen teams,” says Ben.
