Oakman Inns’ core estate continues to respond to the huge efforts it is putting into evolving its offer and engaging its people, with its last five major projects delivering in excess of their investment targets.
The site exceeded all expectations from the moment it opened, which chef director Ross Pike was delighted about given the role that its centralised training hub played in preparing staff.
“The Royal Foresters’ kitchen brigade were the first team to have access to our new training kitchen at The Beech House, Amersham and the investment in this facility has already paid off as it allows the team to work together and form a cohesive, co-ordinated unit without the additional pressures of a live service environment,” he explains.
Ross’ role has many rewarding aspects, including seeing the development of new menu additions come to fruition, but the principal one is the satisfaction of seeing chefs honing their skills, developing career paths and realising their capabilities.
“Part of that development, I think, is to give each individual on the team the self-confidence to believe in their skills,” he says.
