It is an exciting time for S.A. Brain & Co, Wales’ largest brewer and hospitality company, as it increasingly places the kitchen at the heart of its strategy.
“It means that in any one day I could be dealing with a food safety issue, running a training session, completing a coaching visit, writing a workshop or policy, running an equipment trial or spending time in pubs evaluating the kitchen design, so I have to be able to wear many different hats,” he says.
A ‘top-to-bottom’ review of its training strategy has led to Brains reviewing the programmes it offers its kitchen teams and making sure it has the right apprenticeship programmes available for the skill base it utilises within its kitchens.
Alongside this, Brains has partnered with Cardiff and Vale College to train the next generation of chefs and invested heavily in building its ‘Kitchen Essentials’ development programme to create a qualified learning pathway for all levels of chefs within its kitchens.
“The fact that I get to make a difference to people’s careers and working quality every day is what gets me out of bed,” adds Nathan.
