The company operates some of the most distinctive brands in the market, including Harvester, Toby Carvery and Miller & Carter, and Phil recognises that success in such a highly-competitive pub and restaurant environment is dependent on a continuous stream of improvements, with many small advances at site level driving significant benefits in aggregate.
That goes right down to kitchen level, where more recent developments, such as the wider introduction of digitalised prep and par systems and table ordering apps, is driving greater efficiencies across its sites.
Under Phil’s stewardship, the 1,700-strong chain has pursued a strategy based around making progress in three priority areas: building a more balanced business, instilling a more commercial culture and driving an innovation agenda.
The fact that the company has opened just six new sites all year but has completed a massive 230 conversions and remodels tells you all you need to know about the focus of the business and its quest to achieve the right mix of stores in the right areas of its estate.
