Star Pubs & Bars’ Just Add Talent (JAT) initiative has proved to be a compelling mechanism for individuals keen to kick-start a pub business at a fraction of the cost of taking on leased or freehold premises, with dedicated menu packages offering a fast-track route to providing a comprehensive food proposition.
Karl Watts is responsible for the group’s menu development in its managed operator agreement pubs, which sees him play a vital role in helping licensees deliver a compelling pub menu from whatever kitchen footprint they have at their disposal.
Karl admits there is nothing like designing a dish and then watching its successful roll-out and execution.
“The most rewarding aspect of his role is being involved in the evolution of recipes and then seeing the feedback from kitchen teams and guests,” he says.
Being part of the giant Heineken group gives Star access to a large amount of insight and data and that drives its menu innovation process around what people want to eat, when they want to eat and how much they are prepared to pay for it.
There are more than 100 sites that fall within Star’s JAT framework and that number is expected to reach 150 by the end of the year – meaning even more pub managers are set to benefit from Karl’s work behind the scenes.
