The casual dining sector can be an unforgiving place, as Prezzo knows only too well after being forced to shed almost 100 stores two years ago in a bid to retain its profitability in the face of enormous cost pressure.
Multiple restaurants have been refurbished with a new look and feel, while the food team, led by chef director Paul Lewis, have pulled out all the stops to improve the chain’s offering and deliver new menus to entice customers.
“The biggest focus this year has been the recruitment and development of our back-of-house teams. The business is investing a huge amount of time and resource into ensuring food quality and service is simply the best,” he explains.
Paul’s role is extremely diverse, encompassing everything from sourcing, development and training through to margin, design and strategy.
That naturally requires plenty of cross-functional working throughout the business with all departments – which he absolutely loves.
“The most enjoyable part of my job is working with teams across the business, especially recently where my role has taken me back more into the field, meeting our great restaurant teams,” he says.
