Andy Briggs is fiercely passionate about being able to help people grow their pub businesses with the assistance of the menus and training programmes that Punch Pubs & Co can centrally provide.

“Bringing publicans into our industry-leading development kitchen here at The Academy is a great opportunity to bring our food to life and I don’t think it is a secret that if you give people your time and share your knowledge and passion then they are more likely to grow themselves. This is where I get the most enjoyment out of my job,” he affirms.

2019 has certainly been one of his most memorable as he has worked closely with the chain’s operations team and publicans to build compelling menus for four distinct tiers of the market, resulting in like-for-like sales within each of those concepts to increase by a healthy 4%.

He is responsible for ensuring each menu meets the needs of its target market and provides a quality food that is easy to execute safely.

Andy is the first person in the food team at Punch Pubs to recruit for an apprentice to work alongside him in the company’s development kitchen, guaranteeing that his wisdom and experience will soon benefit the next generation of talent looking to develop a career in food.
