POWER LIST 2019, KITCHEN INNOVATORS: Jim Wealands, Group Food Development Director, CH&CO

Caterer CH&CO continues to be a food-focused and customer-centric business and that is epitomised by its dedication to creating varied, nutritious and exciting menus for the 750 clients it serves.

Jim Wealands and the company’s executive chef team work hard to ensure that its food offer engages customers and can rival anything found on the high street.

A growing emphasis on health, wellbeing and sustainability has shaped much of the good work that has taken place within its kitchens and Jim is only too aware of the need to continue innovating to build on its achievements to date.

Plant-based dishes represent around 25% of CH&CO’s menu options, while meat dishes have been reduced by 20% to offer healthier choices.

Many of its sites now cultivate some of their own vegetables, herbs and honey, while 50% of its main ingredients are sourced in the UK to support local farming.

All of this explains why CH&CO is the largest and most diverse contract caterer to be awarded the top-level rating from the Sustainable Restaurant Association.

From a market perspective, meanwhile, CH&CO’s £85m takeover of Mitie’s catering arm should catapult it to a new level and allow it to share the kind of best practice that will drive enhanced services for clients.
