The expansion of Hand Picked Hotels to 20 sites during recent years, coupled with the growing importance of locally-sourced and seasonal food, led to the luxury hotel chain creating a group executive head chef position and after awarding that role to Matthew Ashton – who’d spent three years at Woodlands Park Hotel in Kent – it hasn’t looked back.
“Nowadays, the head chef is not only a good cook but also a coach, accountant, human resources manager, parent figure and kitchen manager, and for some chefs this has been uncharted areas so I have had to help them prepare for that,” he describes.
It is also crucial that food is of the highest quality and cooked consistently across the entire group.
With flavours and tastes constantly evolving, Matthew is focused on continuously raising the bar and pushing boundaries to be successful.
One of his most significant achievements is the development of a Chefs’ Academy to train apprentice and commis chefs.
That has provided chefs with a clear pathway for personal growth and helped its kitchens maintain the very best practices.
