Casual dining chain Byron’s appointment of renowned chef and food writer Sophie Michell as its food and drink director is a clear statement of its intent to breathe fresh life into its offering in what has become a crowded premium burger market.
Having undergone a period of restructuring following a CVA, which included exiting the best part of 20 sites, the chain hopes Sophie’s extensive experience as a chef, restaurateur and food writer will benefit its recipes and drive its menus in an exciting new direction.
She has worked in kitchens for more than 20 years, including as executive chef of Belgrave Hotel and Home House. She is also part of the team behind Gorgeous Kitchen at Heathrow Terminal 2.
As well as her success in the kitchen, Sophie has forged a career as a food writer and television presenter publishing eight cookbooks and hosting successful TV shows such as Cook Yourself Thin. Needless to say, she’s relishing her new challenge.

Byron was acquired by fast-growing alternative investor Three Hills Capital Partners last year and currently operates 53 units in the UK.
