When Pranee Laurillard told her husband Andy that she wanted to open a Thai restaurant 17 years ago, the pair could never have envisaged where the journey would take them as they set about remortgaging their house to afford their first site.
The husband-and-wife team have developed a proven roll-out model that has led to them extending the simple yet authentic Thai cuisine that the chain is renowned for to a growing number of provincial towns and cities in the south-east of England.
Andy has reportedly described Pranee as the “brains behind the operation”, crediting her with driving the operational side of the business, including menu creation and kitchen development.
With the company’s contemporary take on high quality Thai cuisine at a competitive price point appearing to resonate with customers, the chain has ambitions to expand beyond its southern heartland and that is likely to see it breach new locations in 2020 if it can overcome the cost pressures facing the industry.
With its restaurants typically located in quirky or listed buildings, Pranee will undoubtedly maintain the highly selective approach to site acquisition that has served it so richly up to now.
