One Series induction range

A close-up look at three of the latest cooking innovations from British catering equipment manufacturer Falcon Foodservice Equipment.

1. Dominator Plus flexi pan

The Dominator Plus version of Falcon’s innovative flexi pan offers true flexibility to a commercial kitchen environment, combining a bratt pan, large pot, sauté pan, wok, griddle and pan steamer in one unit.

One of the factors that sets the Falcon flexi pan apart is its user-friendly operations – chefs simply turn the control dial to the desired cooking mode, while the control panel displays the optimum settings for the main cooking methods.

As well as being easy to use, the Dominator Plus flexi pan, which has a temperature range of 60°C -280°C, is easy to install, since it requires no plumbing – the manual water fill means there’s no need to connect a water supply.  Its robust construction is matched by its fast performance, with the unit running off a 3-phase 32 amp supply.

Practical features include a GN 1/1 tray fitted in the cabinet below the pan, for easy transfer of stews and soups.  The unit is designed to be easy to clean, with rounded internal corners and wipe-down surfaces.

2. Dominator Plus G3101HD oven range

The G3101HD, builds on the success of Falcon’s G3101 Dominator Plus oven range and is aimed at chefs who need a more powerful, faster cooking performance. The performance comes from newly developed gas burners that are 30% more powerful than standard versions. In fact, each of the six burners can deliver 6.9kW.

They are complemented by the large 7.1kW oven, which has a 2/1GN capacity and a temperature range of 120°C-270°C.

The burners aren’t the only enhancement on – it also features cast iron pan supports that are bigger and harder wearing than ever before, able to cope with the toughest kitchen environments. Practical and user-friendly features on the hob include removable drip sheds under the burners to catch any spills.

Five shelf positions give chefs plenty of loading options and the oven’s vitreous enamel finish makes it easy to clean. The design also features a high flue, which minimises the risk of food debris falling into the unit through the ventilation gaps.

3. One Series induction top oven range

Falcon’s One Series induction top oven range is aimed at operators who want the quality and reliability of a Falcon product, but who don’t need the high power and performance of its F900 or Dominator Plus models.

The One Series range features a fan assisted oven and a hob with six induction heat zones.  The induction technology gives instant heat and precise temperature control – and the One has a 3kW boost function that allows the chef to boost power to a selected induction heat zone.

Built-in pan detection means there’s no wasted energy and very little wasted heat. The One Series has a robust, 6mm toughened glass hob plate that can withstand the knocks of a busy commercial kitchen.  It’s also a cinch to keep clean – the kitchen brigade can simply wipe spillages away.

The One Series’ fan-assisted oven is 2/1GN compatible, has a temperature range of 100 – 250°C, offers five shelf positions and is supplied with two shelves. Glass panelled doors and two internal lights make it easy to monitor cooking progress without having to open the door and lose valuable heat.
