Drake & Morgan is still a young player in the UK restaurant scene given it was only founded in 2008, but what it lacks in years it more than makes up for in ambition.
Having ratcheted its London-focused store estate up to nine sites, it recently dipped into its cash reserves to snap up Corney & Barrow Bars, the operator of 10 C&B bars as well as the sole Devonshire Terrace bar and restaurant.
The move forms part of Drake & Morgan’s strategy to build a significant, multi-brand bar and restaurant portfolio in London and beyond, with plans to add another five sites over the next 12 months.
Group executive chef, Robert Mitchell, has been a key factor in the chain’s blossoming reputation, overseeing the development of the food menu and the optimisation of its kitchens.
The kind of challenges that success breeds was illustrated last Christmas when he described the conundrum of managing increased capacity in seasonal periods.
“We go from achieving net sales on food prior to December of around £500,000 per month to £1.6m during the festive season,” he said. “To facilitate the increased footfall, we have a lot of pre-booked packages, which take more of a banqueting style. Christmas for us is huge, we go from 400-500 covers a day to around 1,500.”
