Mexican burrito chain Chipotle’s global store estate now spans 2,000 units, underscoring its status as one of the fastest-growing foodservice chains in the world.
And as the chain grows, so too does the need to ensure the hardware it uses delivers the consistency expected of a global brand. But it goes one step further than that: the kit also has to be operated and maintained properly.
The man charged with ensuring that is the case is Rudolf Plazinski, European facilities specialist at Chipotle, who is responsible for all kitchen maintenance issues within the UK. It is a role that cannot be underestimated given that any form of downtime means lost sales.
Chipotle works closely with Electrolux and Rudolf admits that an open working relationship with suppliers is vital: “Maintenance can be complicated at times, which is why it has always been very important for us to be able to work with a reliable supplier who can offer suggestions when it comes to troubleshooting and are also prepared to visit a site in the event staff are experiencing an issue they are unsure how to rectify.”
