Signature FSE has partnered with acclaimed patisserie consultant and pastry chef Claire Clark MBE from Pretty Sweet to demonstrate the precision of French manufacturer De Buyer’s new perforated tart rings at Hotelympia.
In the world of high-end pastry, creativity is essential, which is why de Buyer, French manufacturer of pastry utensils since 1830, regularly works with renowned pastry chefs to develop new pastry products.
Signature FSE, which distributes the brand’s products in the UK, is collaborating with Clark and Pretty Sweet’s business partner Sarah Crouchman to create a selection of patisserie creations using the new de Buyer perforated tart rings.
Every day during the Hotelympia show, new creations will be presented on the Signature stand showing the creativity and uniqueness of the de Buyer pastry tart rings.
De Buyer has been designing perforated tart rings a various sizes and shapes over the last few years and created a large collection in partnership with L’Ecole Valrhona.
The perforated stainless steel tart rings have been studied for perfect tart bases aimed at high-end patisserie as they enable a regular cooking for a crusty and browned pastry or for fast freezing. The perforation also avoids the dough from blistering during baking and allows a perfect result.
Clark became the first person in the UK and only female recipient of the ‘Meilleur Ouvrier de la Grande Bretagne’ (MOGB) or the ‘Best Crafts Worker of Britain’, the highest recognition of professional excellence.
Clark has worked in some of the most prestigious venues:, including the Ritz, Claridges, and the Intercontinental and Westbury hotels. She set up a pastry kitchen at the House of Commons and became a senior pastry lecturer at Le Cordon Bleu Culinary Institute.
She launched Pretty Sweet, a high-end patisserie catering service aimed at supplying hotels, restaurants and events, two years ago.
