Cheftop Mind.Maps Big Compact Plus combi oven

Unox has released the new Cheftop Mind.Maps Big Compact Plus, a trolley combi oven designed to offer maximum performance inside a width of 650mm.

Suitable for compact kitchen spaces across any sector, the Big Compact Plus combines all the major features of the Cheftop Mind.Maps with a slim footprint.

The latest combi is suitable for GN1/1, GN1/2 and GN1/3 trays, ensuring that it is compatible with the majority of blast chillers available in the UK market.

Key features include Mind.Maps technology for ‘data driven cooking’, giving chefs access to information to help improve productivity and efficiency, enhance safety and transparency, optimise water and energy efficiency, and eliminate waste to maximise profits.

Kitchen staff have the ability to collect data, analyse the modes of use and produce daily reports, as well as send recipes and download HACCP data to any oven in any part of the world.

The Air.Maxi technology enables intense and uniform air flow on each tray, which should reduce cooking times and maximise productivity with consistent results.

Capable of going from 30˚C to 300˚C in 270 seconds, the Big Compact Plus also uses Unox’s Steam.Maxi technology for rapid steam saturation with full and partial loads.
