Every time Grande Cuisine exhibits at a show it likes to give visitors to its stand a feel for the quality of the brands that it represents and Hotelympia was no different.
This year we were really pleased to exhibit another Athanor suite on the stand, this one destined for The Fox at Crawley on the Hampshire/Dorset border. This is a new project being undertaken by chef patron Lenny Carr-Roberts in conjunction with local distributor HCE.
At the heart of the kitchen is a one piece Athanor cook suite – measuring 2400mm x 1350mm – with a one piece 3mm stainless steel and chrome titanium alloy primary top.
Set within the suite are 1 x 14kw multi-point/multi-zone induction hob, 2 x twin Plaque Athanor planchas, a recessed section to accommodate free-standing fryers and set below the top is one set of hot holding drawers.
The suite is ultimately designed to provide high production capability in the morning using large pans on what is essentially three large solid tops (the Plaque Athanor can be used as such during mise-en-place, as can the induction) and then the flexibility of cooking with smaller pans which can be used on the induction or Plaque, along with direct cooking during service.
